For my July recipes, I will be giving you some recipes for refreshing drinks. So whether you are sitting poolside or cutting the grass, these will quench your thirst and cool you down. And they might even be nutritious for us. I will have three more for you next time, too.
Pina Colada Slush
* 2 cubes cubed fresh pineapple
* 1 1/2 cups pineapple juice, chilled
* ¼ cup cream of coconut (such as Coco Lopez)
* 1 cup ice cubes
* 1 cup vanilla fat-free frozen yogurt
Place pineapple into freezer; freeze until firm (about 1 hour). Remove from freezer; let stand 10 minutes. Combine juice and cream in a blender. With blender on, add pineapple and ice cubes, 1 at a time; process until smooth. Add yogurt; process until smooth. Serve immediately.
Passion Potion
* 2 cups cubed peeled ripe mango
* 1 cup cubed pineapple
* 1 1/2 cups orange juice, chilled
* 1/2 cup passionfruit nectar, chilled
Place the mango cubes and pineapple cubes into freezer, and freeze until firm (about 1 hour). Remove from freezer; let stand 10 minutes. Combine mango, juice, and nectar in a blender, and process until smooth. With blender on, add pineapple; process until smooth. Serve immediately.
(Substitute apricot or papaya nectar if you can’t find the passionfruit nectar).
Five Fruit Crush
* 3/4 cup sliced banana
* 1/2 cup chopped peeled ripe mango
* 2 cups whole strawberries
* 3/4 cup pineapple juice, chilled
* 1/2 cup orange juice, chilled
* 1/2 cup ice cubes
Place banana and mango into freezer; freezer until firm (about 1 hour). Remove from freezer; let stand 10 minutes. Combine strawberries and juices in a blender; process until smooth. With blender on, add banana, mango and ice cubes, 1 at a time; process until smooth. Serve immediately. |
