From the April 19, 2006 issue of The Tri-County Journal & Chattahoochee Chronicle.

   I used to have a job where I traveled all over the country. For a while my territory was to the west to California and north to Pennsylvania. I did that for a good amount of time.  I accumulated a great deal worth of airline miles. On just Delta it was 1,300,000. So I was a “million miler.” In those days it was called the frequent flyer program. Those miles would never expire (so I thought). Then the program was changed to sky miles. Sky miles could expire in three years, if you did not travel. But the two different programs were kept separate until recently.
   About a month ago I received a letter stating all my miles would be changed to sky miles. So starting in December I need to begin using my miles -- I have over 800,000 left, or they will start to expire. Since I have not been on a plane in a few years, I guess the time is drawing near! I will have to fly somewhere every so often.
   One of the places we would like to see is Alaska. Which made me think of this recipe.

Speedy Salmon Patties

   * 1 – 12 ounce can pink salmon, undrained
   * 1/4 cup minced green onions
   * 1 egg, lightly beaten
   * 1 tablespoon chopped fresh dill
   * 1 clove garlic, minced
   * 1/2 cup all-purpose flour
   * 1 1/2 teaspoons baking powder
   * 1 1/2 cups vegetable oil
   Drain salmon well, reserving two tablespoons liquid. Place salmon in medium bowl; break apart with fork. Add reserved liquid, green onions, egg, dill and garlic; mix well.
   Combine flour and baking powder in small bowl; add to salmon mixture. Stir until blended.  Shape mixture into six patties.
   Heat oil in large skillet to 350°. Add salmon patties, cook until golden brown on both sides. Remove from oil, drain on paper towels. Serve warm.
